Apple-Cranberry Fritters

1 cup sifted flour
3 tablespoons brown sugar
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
2/3 cup milk
1 egg yolk
1 tablespoon melted butter
Add 1 apple, peeled and finely diced
1/4 cup dried canberries
2 egg whites
Powdered sugar, for garnish



Prepare
:

In a bowl, combine the flour, brown sugar, baking powder, salt and cinnamon. Set aside.

In another bowl, combine the milk, egg yolk, melted butter, and diced apple. Slowly add the dry ingredients, 1/4 cup at a time.

Beat the egg whites until peaks are soft and high, but not too dry. Fold the egg whites into the batter. Stir into the batter. Add dried cranberries.

Hot oil heated to 375°F in a heavy deep-bottomed pan (about 3 inches). You can also use a tabletop fryer, if you have one.

Using a deep soup spoon, scoop 1-inch balls out of the batter and drop into the oil. Fry for 1 to 2 minutes. When the balls turn golden brown, remove with a slotted spoon and drain on a paper towel for 30 seconds. Transfer to serving plate – sprinkle with powdered sugar and eat immediately.
