1 egg yolk
1 tablespoon melted butter
Add 1 apple, peeled and finely diced
1/4 cup dried canberries
2 egg whites

How to Serve:

In a bowl, combine the flour, brown sugar, baking powder, salt and cinnamon. Set aside.

In another bowl, combine the milk, egg yolk, melted butter, and diced apple. Slowly add the dry ingredients, 1/4 cup at a time.

Beat the egg whites until peaks are soft and high, but not too dry. Fold the egg whites into the batter. Stir into the batter. Add dried cranberries.

Using a deep soup spoon, scoop 1-inch balls out of the batter and drop into the oil. Fry for 1 to 2 minutes. When the balls turn golden brown, remove with a slotted spoon and drain on a paper towel for 30 seconds. Transfer to serving plate sprinkle with powdered sugar and eat immediately.
