Watermelon Coconut Martini
Description:

A fun pink cocktail when you're in the mood for something light and fruity that's not a Cosmopolitan! Goes wonderfully with spicy Asian flavors and summertime salads.


Ingredients: Print Ingredients

• 1 8-oz. slice watermelon
• 3 Tblsp. coconut milk (from a can is fine)
• pinch sugar
• several sprigs of fresh mint
• 6 oz. vodka
• 1 oz. dark chocolate (*optional, see below)



Prepare
:

Separate the watermelon from the rind and place in a blender together with the coconut milk and sugar. Blend until liquid. Add a few mint leaves; blend again.

In a shaker with ice, shake the watermelon mixture together with the vodka.


How To Serve:

Pour into two martini glasses + garnish with a sprig of fresh mint.

*Optional:,/i>melt the dark chocolate in a small bowl in the microwave. Dip your finger into the chocolate and make "dots" on the inside of the martini glasses with the chocolate. Place in the freezer for a few minutes to harden before pouring in cocktail. The chocolate dots look like watermelon seeds!
