Cheese & Red Pepper Soufflé

Ingredients: Print Ingredients

2 Tblsp. butter
6 eggs
1/2 cup milk
1/3 cup diced red pepper
2 Tblsp. diced shallots
1/3 cup diced prosciutto (optional)
1/2 cup grated Parrano Dutch (gouda)
1/4 cup freshly grated parmesan cheese
1 tsp. salt
1 tsp. pepper
2 tblsp. finely chopped fresh dill



Prepare
:

Heat up your oven to 350 degrees. Place two tablespoons of butter in a deep ceramic baking dish.

Separate the eggs; in a small bowl, whisk the yolks together with all of the rest of the ingredients, reserving 1 tsp. of dill.

In another bowl, whisk the egg whites until stiff peaks form. Gently fold into the yolk/cheese mixture. Melt the butter by sliding the baking dish in the oven for about 2 minutes, then slide it back out and pour the egg mixture into the hot melted butter. Cook for 20-25 minutes or until the middle is set.




How To Serve:

Garnish with a sprinkling of fresh dill. Serve immediately!
