Langostinos with Garlic-Laced Butter
Description:

Langostinos are a bright pink crustacean that looks like a cross between a lobster and a giant prawn, popular in Italian and Spanish cooking. You can find these at most Asian markets or at certain gourmet grocery stores. There isn't a lot of meat inside, but what there is is tender and sweet, perfect for nibbling as you thumb through that travel magazine.


Ingredients: Print Ingredients

1 pound fresh langostinos, washed
3 cloves garlic, finely chopped
2 tblsp. butter
1/2 bunch Italian parsley, coarsely chopped
1/2 cup white wine
Freshly cracked black pepper & salt



Prepare
:

In a small skillet, melt the butter and saute garlic for 2-3 minutes over medium low heat. Fold in wine, parsely, and salt and pepper to taste. In a shallow saucepan, steam langostinos in 1/2" water for 2-3 minutes. Remove and serve immediately with garlic dipping sauce.


How To Serve:

To make a special entree with langostinos, prepare the recipe for risotto cakes beforehand and emulsify the garlic dipping sauce by whisking it until it becomes thick and creamy. Place a tablespoon of the sauce on a plate, followed by a rice cake and arrange the langostinos over the top. Drizzle the rest of the emulsified garlic butter on top and sprinkle with chopped Italian parsley to garnish.
