Apple and Oven Dried Cranberry Compote w/ Fresh Whipped Cream
Description:

This easy and delicious compote is a perfect addition to your breakfast or brunch tray... the cranberries burst with tangy flavor and the apples are soft and sweet. A perfect blend of winter fruits, so eat up!


Ingredients: Print Ingredients

2 tblsp. butter
1/8 c. orange juice
1/4 c. sugar
1 tsp. cinnamon
1/2 tsp. ground cloves
1 large apple, chopped into small cubes (A nice hard winter apple is preferred, like Fuji or Brayburn)
1 cup fresh cranberries, roughly chopped

1 pint whipping cream
2 tblsp. sugar
1/2 tsp. vanilla



Prepare
:

Preheat the oven to 325.

Melt the butter in a saucepan over medium heat and add the sugar, orange juice and spices. Stir until bubbly, then remove from heat and add the chopped fruit, tossing until the fruit is well coated.

Spread the fruit in a shallow baking dish, and cover loosely with foil. Bake for 25 minutes, then remove foil and cook for 5-7 additional minutes, or until the apple chunks are slightly golden around the edges. Remove from oven and cool slightly.

With an electric hand mixer or a strong whip, whip the cream together with the sugar and vanilla until soft peaks form.


How To Serve:

Spoon the warm compote on to a plate and place a dollop of whipped cream on top.

This is perfect next to a stack of pancakes, a plate of fluffy scrambled eggs, or a few strips of crispy bacon.


Experiment:
Try filling a buttery croissant with the compote for a special treat!
