Lemon Aioli
Description:

Aioli is light and creamy, a kind of mayonnaise that can be used to accent many different dishes. This one is fresh and lemony, perfect for spreading on crostini or mixing into a recipe.


Ingredients: Print Ingredients

1 clove garlic, finely minced
1 egg yolk
1 cup extra virgin olive oil
juice of 2 fresh lemons
Freshly cracked black pepper
Salt




Prepare
:

In a small bowl, mix together the garlic and egg yolk. Add half of the olive oil and beat rapidly with a wire whisk. When the mixture has emulsified, add the rest of the olive oil, the lemon juice and the salt and pepper. Whisk until smooth and creamy.
