Meyer Lemon & Almond Waffles
Description:

These light waffles are perfect for a lazy Saturday morning. Meyer Lemons are believed to be a cross between lemon and orange, and they have a refreshing tangy-sweet flavor. The tartness of the lemon is a perfect counterpoint to the sweet waffle batter, and the toasted almonds adds a satisfying crunch.


Ingredients: Print Ingredients

Waffles:

1 cup all purpose flour
1 tsp.baking soda
1 tsp. salt
1/2 cup sugar
1 small egg
1/2 cup whole milk
1 tsp. vanilla

1/4 c. toasted almonds, cut into slivers or chunks

Meyer Lemon Sauce:

Juice of 2 Meyer Lemons (if you can't find them in your grocery store, use regular lemons and add 1 tblsp. of orange juice)
1 tbslp. Butter
1 tsp. sugar



Prepare
:

In a bowl, mix together the dry ingredients; set aside. In another bowl, mix together the egg, whole milk and vanilla until smooth. Blend the wet and dry ingredients together and stir briefly.

Bake the batter in your waffle maker until golden brown.

In a small saucepan over medium heat, melt the butter and stir in the sugar and lemon juice. Stir with a wooden spoon until thick and bubbly. Remove from heat.


How To Serve:

Arrange the waffle on a plate and drizzle with the lemon sauce. Sprinkle with powdered sugar and a few pieces of slivered almond.
